Chana masala, a spicy and delicious Punjabi recipe is most popular in Indian cuisine.
Chole kulche, chole bhature, chole Chaat and chole chawal are everyone's favorite and popular in Indian street food also.
So chole comes in every foodie's favorite food list.
Chole masala is prepared with chickpea or Kabuli chana and enjoyed with bhature, chapati or jeera rice etc....
So this is the perfect curry which goes well with any indian bread and rice.
There are so many ways of making it, here I tried
To keep this recipe simple and easy, which tastes yumm and delicious
 In this recipe we will prepare gravy masala with onion, garlic, ginger, tomatoes and indian spices.
Here I have used homemade garam masala which has flavor of all Indian spices you can add any garam masala.

     1 cup - 250 ml.

INGRIDIENTS:-

  • Chole or kabuli chana - 1.5 cup
  • 1 tea bag or 1/2 tsp tea 
  • Oil - 3 tbs. (To make masala)
  • Onion - 3 medium sized
  • Tomatoes - 2 
  • Green chili - 2 
  • Crushed ginger - 1 tsp
  • Garlic cloves - 5-6
  • Cumin seeds - 1/2 tsp.
  • Heeng - 1/4 tsp
  • Tej patta or bay leaf - 2
  • Turmeric powder - 1 tsp.
  • Coriander powder - 1.5 tsp
  • Red chili powder - 1tsp.
  • Salt as required
  • Garam masala - 1/2 (if you use homemade garam masala ) if you use ready add 1 tsp.
  • Fresh milk cream - 1 tbs.
  • Coriander leaves - handful

DIRECTIONS:-

Cook chana

  • Wash chickpeas or chana and soak overnight.
  • Add 3 cup water in pressure cooker, add soaked chana in it.
  •  Add tea leaves in cooker, if you don't want to wash boiled chana then you can add tea bag also.
  • Cover pressure cooker lod and cook it for 5-6 whistle.
  • Open lid when pressure releases if you add simply tea leaves was chana if you use tea bag remove that and drain extra water.

Prepare masala gravy:-

  • chana is in pressure cooker meanwhile we can prepare masala for chana.
  • Coarsely grind the onion, green chili, ginger and garlic in grinder.
                              

  • Heat 3 tbs. Oil in a pan. Add tej patta, heeng and cumin seeds or jeera in it.                           


  • Add grinded mixture in it and cook in low flame for 5 min.
                       


  • Meanwhile prepare paste with red chili powder, salt, turmeric and Coriander powder by add very little water.
                   



  • Add this spices mixture into pan and cook for more 5 min in medium flame.
                     


  • Now add tomato paste and garam masala in it.
                        


  • Cook it till masala separates oil.
You can add thick fresh cream in it.
Add boiled chana or chickpeas in it.
               



  • Stir it well.
  • Now add Luke warm water according to the consistency you want.
                         

  • Turn off flame when chana masala starts boiling, garnish it with fresh green coriander leaves.
  • Chana masala is ready serve it hot with bhatura , chapati, jeera rice  or poori.
