Here I am sharing my version of kachoris. Kachori takes time to make but when you finally make them you won't stop just only in one kachori or may be you would finish by eating all them in one go......
INGRIDIENTS:-

- All purpose flour or maida - 2.5 cup
- Oil - 3 tbs.
- Water to knead dough
For stuffing:-
- Split urad Dal -1/2 cup
- Water to soak - 3 cup
- Oil - 2 tbs
- Cumin seeds -1/2 tsp.
- Heeng - 1/4 tsp.
- Fennel or sonf - 1 tsp.
- Coriander seeds - 1/2 tsp.
- Turmeric - 1/2 tsp.
- Salt as required
- Red chili powder - 1 tsp.
- Coriander powder - 1/2 tsp.
- Garam masala - 1/2 tsp.
- Amchoor powder - 1/4 tsp.
- Roasted besan - 1.5 tsp.
- Water 1/4 cup
DIRECTIONS:-
- Soak urad Dal overnight or for 3-4 hours.
Dough :-
- Now prepare dough for kachori.
- Add 2.5 cup all purpose flour or maida in a wide bow.
- Add required salt.
- Now add 3 tbs. Oil in flour and mix it well.
- Now knead soft dough pinched by adding water gradually.
- Keep dough aside for 15- 20 minutes.
- Meanwhile we'll prepare stuffing for kachoris.
Stuffing:-
- Wash soaked urad Dal and grind it coarsely for few seconds.
- Now heat 2 tbs. Oil in a pan.
- Keep flame it's lowest.
- Add cumin seeds, heeng, fennel seeds, coriander seeds, turmeric powder, salt, crushed cloves and black pepper.
- Add garam masala, coriander powder and red chili powder in it.
- Now add grinded urad Dal in it and mix it well with spices.

- Add 2 tsp. Roasted gram flour in it
- Mix it well and cook for 10 minutes.
- Stuffing is ready
Kachori making:-
- To make kachori make a small size ball with dough.
- Now press the ball between palms and with help of the fingers make the middle thicker and flattened from the edges.
- Now make a small ball of stuffing and place it flattened dough and bring the edges of dough together and join them.
- Pinched off the extra dough from it.
- Flattened the stuffed ball with the help of Palm and rolling pin.
- Now make kachoris by following same procedure.
- Heat oil to deep fry kachoris.
- Keep flame low and fry kachoris.
- Fry the kachoris
- Let them cook in low flame.
- Kachoris are ready serve it hot with sweet tamarind and sour green chutney.
