Tomato fried rice is my all time favourite street food. There are so many ways of making fried rice. Best thing about this recipe which I like most is you can add so many vegetables in it to make it more healthy and yummy. Here I am sharing you tomato fried rice. We will use tomato puree to add tomato flavour in recipe. You can add as many as vegetables in your fried rice like carrot, green peas, broccoli, cabbage etc. here I have added basic ingredients to make it easy and quick you can add other ingredients also to add your favourite flavour in recipe.

INGREDIENTS:-
- Cooked rice -2 cup
- Tomato puree - 2 🍅
- Chopped green chili - 2
- Chopped onion - 1 medium sized
- Cashew nuts and raisins
- Green coriander leaves- handful
- Oil - 1 tbs
- Jeera or cumin seeds - 1/2 tsp
- Mustard seeds -1/2 tsp
- Turmeric powder -1/4 tsp
- Red chili powder -1/2 tsp
- Coriander powder -1/2 tsp
- Black pepper powder -1/4 tsp
- Garam masala - 1/4 tsp
- Salt as required
- Crushed cloves -3
- Hing pinch
DIRECTIONS:-
- First heat oil in a pan.
- Eat cumin seeds and mustard seeds in it.
- Let the mustard seeds be crackled.
- Now add pinch of heeng in it.
- Add cashew nuts and raisins in it.
- Add chopped onion, green chili, ginger and garlic paste.
- Now add salt as required, black paper powder, crushed cloves, turmeric powder, coriander powder and garam masala.
- Cook it for 5 minutes in medium flame.
- Now add tomato puree in it and cook till it separates oil.
- Add cooked rice in it and mix well.
- Garnish it with fresh coriander leaves.
Enjoy fried rice with papad and pickle.
