Let's continue the rice recipe series, which recipe comes in you mind first when you think about rice recipes for me it's fried rice. There are so many ways of making fried rice and the best thing about this recipe which I like most you can experiment with this recipe using different different ingridients According to your taste. You can add veggies you like most.

This was my favorite lunch box in my school days so sharing this amazing yummy recipe of veg fried rice to make it's everyone's favorite.
Preparation time - 10 min.
cooking time - 15 min
servings - 3
1 Cup - 250 gm
INGREDIENTS :-
To boil Rice:-
- Rice - 1.5 cup
- Lemon juice - 6-7 drops
- Ghee - 1/2 tsp
- Add 3 cup of water with the same cup or rice
To fry Rice:-
- oil - 1.5 tbs
- Cumin seeds - 3/4 tsp
- Mustard seeds - 3/4 tsp
- Bay leaf - 2
- Black pepper powder - 1/4 tsp
- heeng / asafoetida - pinch
- Chopped green chili - 3
- Chopped onions - 3 medium
- Green peas - handful
- Chopped carrot - 1 medium
- Ginger paste - 1 tsp
- Turmeric - 1/4 tsp
- Salt as required
- Red chili powder - 1/2 tsp
- Coriander powder - 1/2 tsp
- Clove powder - 3 cloves
- Garam masala - 1/4 tsp
- Green coriander leaves - handful
DIRECTIONS:-
To cook Rice:-
- here we'll cook rice in pressure cooker.
- First add water in a heated pressure cooker add lemon juice and Ghee.
- Now add rinsed basmati rice in it.
- cook Rice in medium flame.
- Turn off flame just before the first whistle.
- Let the pressure cooker release it's pressure naturally.
To fry rice:-
- Heat oil in a pan add cumin seeds and mustard seeds in it.
- Let the mustard be crackled.
- Now add bay leaf and stir.
- Add heeng.
- Now add ginger paste in it.
- Now we'll add chopped veggies one by one.
- First add green chili and onion and cook it for one minute.
- Add peas and carrot.
- Now we'll add al spices one by one add turmeric powder, salt , pepper powder, clove powder, black pepper powder ,coriander powder and stir well.
- Cook it for 2 min. in low flame.
- Now add garam masala and red chili powder in it.
- Add cooked rice in it and stir well and cook it for 1 min.
- fried rice is ready garnish it with handful green coriander leaves.
